a pinch of asafetida

Method
- Wash chillies and break the stem. Then chop the chillies.
Now keep the heat on the gas.
After this, add gram flour in the pan and fry on medium flame till it becomes brown. Keep the gram flour dry so that it does not burn.
Take out the gram flour in the plate and then heat it in the pan.
Then add cumin, mustard and asafetida in the oil.
When the mustard seeds are cracking, add coriander, turmeric, amchoor powder, pies fennel, green chillies and salt and mix it well.
After this, pour a tablespoon of water in the mixture of chilli and cover the pan and allow the chilly to cook for 2 minutes on a low flame.
Now open the lid and mix roasted gram flour in green chillies . Fry it for 2 minutes and then turn off the gas.
- Prepared Rajasthan granary chili. Now serve it in the food plate whenever you want.

बेसन वाली शिमला मिर्च - Besan Wali Shimlamirch Recipe
बेसन वाली शिमला मिर्च सब्जी बहुत स्वादिष्ट होती है, और बड़ी आसानी से बहुत जल्द बन जाती है. टिफिन में पैक करने के लिये बेसन वाली शिमला मिर्च बहुत ही अच्छी सब्जी है. सब्जी को साइड डिश के रूप में परोसिये.
सामग्री -
- शिमला मिर्च - 3 (300 ग्राम)
- बेसन - 2 टेबल स्पून
- हरा धनियां - 2 टेबल स्पून बारीक कटा हुआ
- तेल - 2-3 टेबल स्पून
- हल्दी पाउडर - 1/4 छोटी चम्मच
- धनियां पाउडर - 1 छोटी चम्मच
- लाल मिर्च पाउडर - 1/4 छोटी चम्मच
- सोंफ पाउडर - 1 छोटी चम्मच
- हींग - 1-2 पिंच
- जीरा - आधा छोटी चम्मच
- अदरक - 1 इंच टुकड़ा (पेस्ट बना लीजिये)
- गरम मसाला - 1/4 छोटी चम्मच
- नमक - स्वादानुसार (आधा छोटी चम्मच से थोड़ा सा ज्यादा )
विधि -
शिमला मिर्च को धोकर, पोंछकर काट लीजिये, डंठल और बीज हटा कर आधे इंच से लेकर एक इंच के चौकोर टुकड़ों मे शिमला मिर्च काट कर तैयार कर लीजिये.
कढ़ाई गैस पर रखिये और बेसन डालकर लगातार चलाते हुये, बेसन का हल्का रंग बदलने तक रोस्ट करके प्याली में निकाल लीजिये, अब कढ़ाई में तेल डालकर गरम कीजिये. गरम तेल में हींग और जीरा डालिये, जीरा भुनने के बाद, हल्दी पाउडर, धनियां पाउडर और अदरक पेस्ट डालकर हलका सा भूनिये, अब कटी हुई शिमला मिर्च डालिये, नमक, लाल मिर्च पाउडर, सोंफ पाउडर, भुना हुआ बेसन और अमचूर पाउडर, गरम मसाला भी डाल दीजिये और सब्जी को कलछी से चलाते हुये तब तक भूनिये जब तक कि शिमला मिर्च के ऊपर मसाले की कोटिंग न आ जाय.
सब्जी को ढककर 2-3 मिनिट धीमी गैस पर पकाइये, सब्जी को खोलिये और अच्छी तरह चला दीजीये. अब सब्जी को फिर से ढककर 2 मिनिट के लिये पकने दीजिये, सब्जी को खोलिये और शिमला मिर्च को चैक कीजिये, अभी शिमला मिर्च नरम नहीं हुई है, सब्जी को ढककर और 2 मिनिट तक पका लीजिये, सब्जी को चैक कीजिये, शिमला मिर्च थोड़ी नरम हो गई है, हमें शिमला मिर्च को ज्यादा नरम नहीं करना है, शिमला मिर्च थोड़ी क्रन्ची ही रहनी चाहिये.
बेसन वाली शिमला मिर्च तैयार है, सब्जी को प्याले में निकाल लीजिये, सब्जी को चपाती, परांठे, या चावल के साथ परोसिये और खाइये.
3-4 सदस्यों के लिये
